Monday:
First course: green salad
Main course: Chickpea-vegetable stew
Dessert: muffins

Tuesday:
First course: roasted beets with balsamic vinegar
Main course: pasta with spinach-cilantro pesto
Dessert: berry fool

Wednesday:
First course: coleslaw (rutabaga-cabbage-carrot)
Main course: Morroccan chicken on rice
Dessert: pineapple chunks

Thursday:
First course: carrot salad
Main course: rice and dahl
Dessert: muffins

Friday:
First course: raw veggies and dip
Main course: Peanut butter sandwiches
Dessert: bananas

  1. Looks delicious! I like that you make most of the meals vegetarian for everyone, too, rather than just taking things out for the vegetarian kid. :) How long do you spend preparing these meals each day?
