Menu Monday

Monday: Ratatouille with ground walnuts over noodles

Tuesday: Tofu-spinach curry on rice

Wednesday: Rice-lentil patties. Cabbage-beet salad.

Thursday: Chicken tortilla soup, biscuits

Friday: Spaghetti and meatballs (with a non-meat version for the vegetarian), salad

  1. I admit to being intrigued by the tortilla soup. Cabbage Beet salad, on the other hand, sounds like something your mother makes you eat when you’ve been bad.

    I demand photos!

    I’ve provided a link to the original tortilla soup recipe. I’ve probably tweaked it some since I first found it, but that’s the recipe I started with. Photos, huh? Since I post my menus before I make the meals, that’s a little tricky. Should I take pictures and put them in as we go?

    Cabbage-beet salad? I love cabbage-beet salad! Beets is yummy.

I so wish you I had you or someone like you closer to me….even the most expensive private daycares here don’t offer vegetarian meals on some days….and on the days they do, its not as healthy as I would prefer, so I cook all my daughter’s food and pack it for her. I don’t mind it but having an option would be nice 🙂

    It surprises me that vegetarianism is still seen as a little exotic. Though I am accommodating a vegetarian family these days, the meals you see here are pretty much how I eat normally. Though I can’t call myself a vegetarian because I’ll eat meat when I feel like it, I don’t feel like it very often. I just like vegetarian food!

  4. Spaghetti and (veggie) meatballs is one of my favourite meals. I put a little blue cheese into the tomato sauce, which adds a nice edge to the flavour.

    Though I normally don’t like blue cheese (at all!), I can see that a pinch in the sauce could be pretty good. Maybe I’ll try it some time!
