Tuesday: Vegetable muffins

Wednesday: Lentil soup over rice

Thursday: Spaghetti and meatballs (meat-free meatballs)

Friday: Chickpea-spinach soup

  1. Which vegetables do you put in your muffins?

    Whatever I have on hand! 3 – 4 cups of medium diced vegetables. It’s a great way to use up leftovers. I’ll post the recipe.

  2. Baking powder biscuits? I feel like you have mentioned them before but I can’t remember properly. Are they just… baking powder?

    I have, and should have linked to them. The post’s now been updated to do so. No, just basic biscuits: flour, shortening, baking soda, milk. Easy-peasy.
