Sounds like a great menu!
Do you make that chopped salad according to the recipe? How does that work with your little ones? The recipe called for a *tablespoon* of salt – our guidelines over here for 1-5 years olds are for no more than 2gms of salt a day total…… Does it work without all the salt?
It wouldn’t be the same without the salt, but it might be quite good. I can’t really say, since I’ve only made it twice, and (mostly) followed the recipe. However, that recipe makes a lot of salad. If you read the recipe, you’ll see that you do add all that salt, then you rinse. I don’t add more salt after rinsing. I think it’s feasible you wash away half the salt, so now you’re down to 15g. The last time I made this (I’ve only made it twice so far) it fed my family of four twice, the daycare once, and another lunch for me, which makes it 15 servings. The toddler servings are smaller than adult, so they’re getting something under a gram with this meal. Even so, you’re quite right, it’s a lot of salt, for sure. Perhaps I’ll try it with less salt and see how it compares!
