Menu Monday
It’s been a while, so I’ll explain our eating patterns again. At Mary’s house, children between 12 and 20 or so months get a morning snack, lunch, and an afternoon snack. Older children skip the morning snack. We eat morning snack at 9:30-ish, lunch at 11:30, and afternoon snack at about 3:00.
Lunch is a substantive meal, with three courses. The first course is always a vegetable of some sort. The main is a protein, more vegetables and, usually, a starch. Dessert is usually fruit.
Here’s this week’s menu!
Monday:
First course: corn (niblets, not on the cob)
Main Course: Spinach Pie
Dessert: banana
Tuesday:
First course: collard greens (braised for an hour in water with a sploosh of lemon juice)
Main Course: pasta with pinto beans, swiss chard and cheese
Dessert: grapes
Wednesday:
First course: roasted cauliflower (with optional dip)
Main Course: chicken tikka masala, naan
Dessert: apple slices
Thursday:
First course: ratatouille
Main Course: mushroom-cheese quiche
Dessert: bananas
Friday:
First course: guacamole
Main Course: fish tacos (The link is to my inspiring recipe, but we’ll be making ours with mashed avocados on the taco itself to act as glue for the filling of grilled, chunked (or crumbled) fish, swiss chard, and grated carrots)
Dessert: caramel apples (a decadent treat because we’re having our Halloween party this afternoon!)

First course: cauliflower au gratin
Main course: stuffed green peppers (vegetarian version)
Dessert: Timbits

Main course: sloppy joes (Vegetarian child will get something that looks pretty much identical but is made with veggies and tofu.)
Dessert: peaches
Friday:
First course: roasted cauliflower and sweet potatoes
Main course: spinach pie
Dessert: gelato or Timbits. Depends on where our morning outing takes us!

Sorry I vanished. I was just so tiiiiired last week. Was all I could do to do the job. Feeling a bit more energetic today. We’ll see how I do this week!

Main course: Burgers (veggie, and hamburgers)

Tuesday:
First course: cooked carrot sticks and dip

Main course: enchilada bake
Dessert: apple and pear slices
Thursday:
First course: cucumber salad*
Main course: breaded chicken/ ginger-baked tofu
Dessert: bananas
Friday:
First course: green and red pepper fingers
Main course: sweet and sour broccoli and tofu
Dessert: gelato

*Starred recipes again from my new cookbook, Michael Smith’s Fast Flavours.
**This one is from Cook’s Illustrated magazine, an excellent magazine to which I have a subscription because I love not just the recipes, but the educational aspect of their articles. I’ve learned a lot from their articles: how flavours meld, how to bring out the best, varying techniques. I’ve been able to follow a recipe since I was ten; now I’m learning how recipies — and food — works. It’s terrific!
However, I strongly, really, truly object to their restrictive practices re: their website information. I could give you all a link to the recipe, but there’d be a whacking great pop-up in the middle of the page requesting you to sign up for a 14-day free trial of their site before you could see the recipe hiding behind said obnoxious pop-up. (And may I say how I object that, even as a subscriber — with a three-year subscription, yet — to the print magazine, I am not entitled to view the recipes on their site without paying still more? Obnoxious, I tell you.)
Chef Michael is way classier. (Also less grasping.) Neener, neener. AND his recipes are usually simpler. So there. 😛

Hello! Sorry it’s been so very long since I posted. A combination of pre-Christmas busy-ness, followed by computer problems, then illness, then Absolutely NO Internet for FIVE DAYS, then more mysterious computer problems (thank goodness I have a tech-geek son!) created a very long hiatus. I’m back! Goodness me. Are any of you still there??
My first post back is an easy one, too. I’m being gentle with myself…
Monday: Grilled cheese sandwiches, cauliflower
Tuesday: Broccoli-ham strata
Wednesday: Lentil soup, quinoa-kale pilaf
Thursday: Stuffed green peppers
Friday: Falafels
